Why we like it
The Nero d'Avola grapes are picked as soon as they reach the ideal sugar ripeness and acid levels for making a fresh and mineral base wine. Grapes are pressed gently to produce a white wine from black grapes without any further processing.
Following a period of aging on yeast lees, lasting around 3-4 months, the base wine is placed in autoclaves for the subsequent sparkling process, where it stays for around 45 days. The Charmat method enhances the varietal aromatic qualities, freshness and sapidity typical of the variety.
